I LOVED rhubarb as a child…I would pick it from our neighbor’s garden and chew the sour stalks. Stewed rhubarb for pies was an absolute favorite, but of course contained lots of sugar. This year we are trying our hand at making a Paleo rhubarb “butter” by stewing local rhubarb with raw honey, then using this in our favorite simple loaf recipe. Loaf contains soy-free pastured eggs, local rhubarb, organic coconut flour, organic expeller-pressed coconut oil, raw honey, vanilla extract, organic raw apple cider vinegar, baking soda, organic cardamom, organic ginger, and Himalayan pink salt.
